Civello - on beyond Chardonnay. Change into something different. We strive to make white wines that are refreshing, exciting, irresistible and delicious. When is the last time you heard someone say that about Chardonnay or Sauvignon Blanc? We start with the Pinot Gris grape, known in Italy as Pinot Grigio, which we get from Monterey. Depending on the year, we add the Spanish grape Verdhelo which we get from the warmer Clarksburg area. We add a splash of the German/Alsatian grape Gewürztraminer which we get from California’s coolest counties. Occasionally we add a little Dijon clone Chardonnay from Carneros. Sometimes we even add a little Muscato Fruliano or Albarino.

When white wines are all you make, you do everything you can to make them special.

Civello thrives on spicy food. Once you try this you will never make Mexican Guacamole again. People will kill you for this recipe.

5 ripe avocados (Hass preferred)
1 bunch fresh cilantro
3 green onions
1 lime
¼ cup of your favorite salsa
½ cup olive oil
1 clove garlic
Salt and pepper

The Mix
Add olive oil, washed cilantro leaves, garlic, washed chopped green onions and salsa into a blender and liquefy. Set aside.

In a bowl, gently mash the avocados until creamy. Mix in the blender mixture, salt, pepper and lime to taste. If you have any mixture left over, keep it. People will soon be asking you to make more.
